Short definition
Z-offset is the fine distance between the nozzle tip and the bed on the first layer, normally adjustable while the printer is running.
Full definition
Auto-levelling compensates for the bed's shape but does not know the exact height the nozzle should sit at: that is Z-offset, and it depends on the sheet, the material and even the glue you applied. You adjust it in tenths or hundredths of a millimetre while the first layer prints, watching how the lines come out. It is the setting that most often fixes an adhesion problem, and also the one most people change without writing it down, only to wonder later why the machine printed fine last week.
