Short definition
Layer height is the vertical thickness of each deposited band of material, and it is the setting that most affects visible quality and print time at the same time.

A small layer height gives smoother surfaces, better-defined curves and less visible stepping on sloped areas, at the cost of multiplying time: dropping from 0.2 to 0.1 mm roughly doubles the number of layers and, at the same speed, nearly doubles the duration. The practical rule slicers use is to keep the height between 25 % and 75 % of the nozzle diameter; with a standard 0.4 mm nozzle that means 0.1 to 0.3 mm. Part strength changes too: thicker layers usually bond better to each other.
