Short definition
Infill is the internal structure the slicer generates inside the part, expressed as a percentage of material relative to a solid block.
Full definition
Almost nothing is printed solid, because it would waste material and time without gaining much strength. Infill holds up the walls and the top layers with an internal lattice: 10 to 20 % is enough for decorative parts, 30 to 50 % for functional ones, and above 60 % the strength gain becomes marginal against the extra time. The pattern matters too: grid and gyroid spread load well in every direction, while straight lines are fast but directional. A useful rule: for a load-bearing part, raising the number of perimeters usually adds more strength than raising infill.
